French Onion Chicken Casserole
French onion chicken casserole is an easy, complete chicken dinner that’s satisfying on even the busiest days. This delicious casserole turns a rotisserie chicken and bag of refrigerated hash browns into a cheesy, creamy, family friendly meal.
I know we’re still in the height of summer but I already see back to school on the horizon.
And with that comes busier nights running from one activity to another.
Which means, of course, that I need easy meals my family will actually eat that I don’t have to think about.
Bonus points if I can make it and not have to do a whole sink full of dishes afterwards.
And that is exactly what this French onion chicken casserole is.
It’s easy, creamy, cheesy goodness in the form of chicken, potatoes, and French onion dip flavor.
Only one bowl and one dish required!
Ingredients
To make this you’ll need:
- Hash browns– A 32 ounce bag of refrigerated shredded hash browns.
- Chicken– Chopped rotisserie chicken. Remove the bones and skin.
- French onion dip– The creamy kind. You can use store bought or make your own French onion dip.
- Cream of soup– Cream of chicken but you can really use any cream of soup you have on hand
- Cheese– Shredded Swiss
- Seasonings– Garlic powder, onion powder, salt and pepper
- French fried onions– The same kind you put on green bean casserole
How to Make
This French onion chicken casserole is so easy to make!
Just mix the hash brown, chopped chicken, dip, soup, cheese, and seasonings together until they are evenly combined in a large bowl.
Spread the mixture out in an even layer an 8×8″ baking dish sprayed well with nonstick spray.
Top the casserole with a layer of crispy onions.
Cover the dish tightly with foil and bake it at 350 for 40 minutes.
After 40 minutes, carefully remove the foil and then bake it for another 10-15 minutes.
When the top of the casserole is golden take the dish out of the oven and let it rest for a few minutes.
Serve and enjoy!
Storing Leftovers
Store leftovers in an airtight container or tightly covered in the casserole dish in the fridge for up to 4 days.
Reheat in the microwave or in a hot oven until warmed through.
Tips and Tricks
- Make sure to spray the baking dish well with nonstick spray to make for easier clean up.
- Do not skip the foil for the first part of the baking. The foil keeps the onions from burning.
- Make sure to let the casserole rest before serving to give it a chance to set a bit.

Ingredients
- 1 32 oz bag refrigerated shredded hash browns
- 3 cups chopped rotisserie chicken
- 1 16 oz tub french onion dip
- 1 10.5 oz can cream of chicken soup
- 1 cup shredded Swiss cheese
- 1 tsp garlic powder
- 1 tsp onion powder
- salt and pepper to taste
- 1 6 oz tub crispy french fried onions
Instructions
- Spray an 8x8" baking dish with nonstick cooking spray. Set aside.
- Add the hash browns, chopped chicken, dip, soup, cheese, and seasonings to a large mixing bowl. Stir everything together until evenly combined.1 32 oz bag refrigerated shredded hash browns, 3 cups chopped rotisserie chicken, 1 16 oz tub french onion dip, 1 10.5 oz can cream of chicken soup, 1 cup shredded Swiss cheese, 1 tsp garlic powder, 1 tsp onion powder, salt and pepper
- Transfer the mixture to the prepared baking dish and spread it out in an even layer.
- Spread the crispy onions evenly out overtop of the casserole.1 6 oz tub crispy french fried onions
- Cover the dish tightly with aluminum foil and bake at 350° for 40 minutes.
- Carefully uncover the dish and bake for another 10-15 minutes.
- Remove the dish from the oven and let rest for a couple minutes then serve warm and enjoy!
