Homemade Chipotle steak strips are spot on Chipotle copycat! Perfectly seasoned steak strips get marinaded in a blend of seasoning, adobo sauce, and cooked to perfection.
One of my favorite treats is definitely Chipotle.
You can never go wrong with a burrito stuffed to the brim with their steak strips and all the toppings!
Now you can enjoy spot on homemade Chipotle steak strips any time to make your own burritos, nachos, salads, or tacos.
It’s easy and tastes just like the restaurant version!
Ingredients
Let’s break this into 2 sets of ingredients: one for the steak and marinade and another for the adobo sauce.
For the marinaded steak you’ll need:
- Steak– 2 pounds of steak like sirloin
- Seasonings– Fresh garlic cloves, ancho chile powder, ground cumin, dried oregano, salt and pepper
- Olive oil
- Adobo sauce– You can use store bought, but I highly recommend the homemade version.
For the adobo sauce you’ll need:
- Tomato sauce– The kind you find in the canned goods section.
- Vinegar– Cider vinegar
- Spices– Smoked paprika, cayenne powder, garlic powder, oregano, and salt
How to Make
These homemade Chipotle steak strips are pretty easy to make!
If you are making the homemade adobo sauce, add all of the ingredients for the sauce to a small mixing bowl and whisk together until evenly combined.
Set the sauce aside.
Then start on the marinade by crushing the garlic either with a mortar and pestle or a garlic press.
Either add the remaining marinade ingredients to your mortar and pestle and keep crushing or pop them in a food processor to combine.
Place steak in a bowl and put the sauce on top.
Marinate the steak for at least 20 mins at room temperature or in the fridge at least 2 hours.
Bring the steak to room temperature for at least 30 minutes before cooking.
In a large skillet over medium-high heat, heat 3 tablespoons olive oil until shimmering.
Add marinated steak to the skillet and cook until your desired doneness, stirring as needed.
Transfer it to a cutting board, let it rest for 5 minutes, and chop into small pieces.
Serve warm with your choice of toppings and sides.

Storing Leftovers
Store leftovers in an airtight container in the fridge for up to 3 days.
Reheat in a pan on the stovetop until the meat is warmed through.

You can top these homemade Chipotle steak strips with all your favorite toppings like:

Why do I need to let the steak rest before cutting?
You want to let the steak rest for a few minutes before slicing into it to make sure the juices don’t all run out when you slice it.
Giving it a chance to rest lets the juice redistribute in the meat after it’s cooked.
Tips and Tricks
- You don’t necessarily need to make the adobo sauce from scratch but it is super tasty. If you prefer to substitute it, you could buy a can of chipotle peppers in adobo sauce from the Mexican section at the grocery store and use about 3 tablespoons of the sauce from the peppers.
- Medium rare steak will have a warm red center and be between 130 and 135 degrees. Medium steak strips will have a pink center and thicker brown edges and be between 135 and 145.
- If you plan to marinate the steak for more than 20 minutes, you need to put in the fridge. If you put it in the fridge you can marinate it for up to a full day prior to cooking it. Just make sure to let it come up to room temperature prior to cooking.
