Korean Beef Ramen

Ingredients

To make this you’ll need:

  • Ramen noodles– 2 3 ounce packages. Discard the seasoning packets.
  • Ground beef– I recommend using a leaner option so it’s not too greasy and doesn’t cook down too much.
  • Ginger paste– You can find this in the produce section near the other refrigerated Asian foods.
  • Garlic– Pressed or minced cloves
  • Soy sauce
  • Brown sugar– Packed
  • Salt and pepper– To taste
  • Green onions– For garnish

How to Make 

Korean beef ramen couldn’t be easier!

To make it, just boil water in a medium pot.

Then add the noodles and cook, stirring occasionally, for three minutes.

After 3 minutes, strain the noodles and run them under cold water just long enough to stop them cooking.

Set them aside.

Then cook the beef in a skillet over medium heat, crumbling as it cooks, until browned through.

Drain off any excess grease.

Stir in the ginger paste and garlic and let it cook for another 60 seconds.

Then stir in the soy sauce, brown sugar, and salt and pepper and let the combination cook for another 2 to 3 minutes.

Add the noodles to the skillet, gently tossing them with the sauce to combine.

Cook everything for another 2-3 minutes to thicken the sauce.

Serve warm topped with green onions, and enjoy!

Storing Leftovers

Store leftovers in an airtight container in the fridge for up to 3 days.

Reheat in the microwave until warmed through.

  • Add a little heat with some chili paste or chili flakes.
  • You could substitute ground chicken for ground beef.
  • Other garnish options include sesame seeds, fried wonton strips, crispy chow mein noodles, and lime wedges.

Ingredients

  • 2 3 oz pkts ramen noodles seasoning packets discarded
  • 1 lb ground beef
  • 2 tsp ginger paste
  • 3 cloves garlic pressed or minced
  • 1/3 cup soy sauce
  • 1/3 packed cup brown sugar
  • salt and pepper to taste
  • 4 green onions thinly sliced, for garnish

Instructions

  • Bring water to a boil in a medium pot then add the noodles and cook, stirring occasionally, for three minutes.

  • Strain the noodles and run them under cold water just long enough to stop them cooking. Set aside.
  • Add the beef to a skillet, cooking and crumbling, until browned throughout- about 6-8 minutes. Drain off grease.
    1 lb ground beef
  • Add the ginger paste and garlic to the beef and stir to combine. Continue cooking for another 60 seconds.
    2 tsp ginger paste, 3 cloves garlic
  • Add the remaining ingredients to the skillet, stir everything together until evenly combined, and cook for 2-3 more minutes.
    1/3 cup soy sauce, 1/3 packed cup brown sugar, salt and pepper
  • Add the noodles to the skillet and gently toss with the sauce until evenly combined, then cook for another 2-3 minutes to thicken the sauce.
  • Serve warm topped with green onions, and enjoy!
