Microwave Mug Cupcakes

Microwave mug cupcakes are the perfect sweet treat when you’re not wanting to spend all day in the kitchen. These easy cupcakes don’t even need you to preheat your oven to enjoy them!

Sometimes I just want a sweet fix, you know?

And nothing is better than a cupcake.

But cupcakes can be time consuming and sort of a pain to make if you’re not in the mood.

Well microwave mug cupcakes are anything but!

They are super fast and the perfect want to satisfy a sweet tooth without a lot of work.

Ingredients

To make this you’ll need:

  • Cake mix– A 13.25 ounce box of rainbow chip cake mix and a 13.25 ounce box of angle food cake mix
  • Water
  • Frosting– Any flavor you like

How to Make

Microwave mug cupcakes couldn’t be easier to make!

To do it, just whisk both cake mixes together in a large mixing bowl.

Add 3 tablespoons of the cake mix mixture to a microwave safe mug.

Stir 2 tablespoons of water into the mug to make a batter. 

Microwave the mug cupcake for 1 minute.

Take it out of the microwave and let it rest for a minute.

Frost, serve, and enjoy!

Storing

This recipe makes one single serving of mug cupcake so you shouldn’t have any leftover.

However, you will have leftover cake mix.

Transfer the leftover cake mix into an airtight container and store on your counter or in your pantry for up to 6 months.

Tips and Tricks

  • If you have an XL mug (24-28 ounces), you can double the recipe and microwave for a 1 minute 30 seconds for an XL cupcake.
  • You can sub any other flavor of cake mix for the rainbow chip, but the recipe has to have angel food as the other. Sometimes this will be called sponge cake.
  • Spray the inside of the mug with nonstick spray before adding the cupcake batter to make cleanup easier.

Instructions

  • Add both cake mixes to a large mixing bowl. Whisk them together until evenly combined.

  • Add two tablespoons of water to the mug, and whisk together until the batter's evenly combined. Don't be alarmed if it looks a little foamy.
    2 tbsp water
  • Microwave for 1 minute, then carefully remove the hot mug and let the cupcake rest for another 60 seconds.
  • Frost, serve, and enjoy!
    3 tbsp frosting
