Mini deep dish pizzas are a bite the whole family will love! With a couple of easy shortcuts, these pizzas come together in under 25 minutes, making them the perfect after school snack or busy night dinner!
One thing is a fact in our house.
If we are in a dinner or snack rut, pizza breaks it.
We all love it, and it’s easy.
And it makes the sons so happy, which of course makes me happy.
Almost as happy as the fact that these mini pizzas take only 10 minutes to put together so this busy mom isn’t stuck in the kitchen.
Ingredients
To make these you’ll need:
- Pizza dough– A tube of the refrigerated kind. You can find these next to the biscuits and cinnamon rolls in a tube.
- Cheese– Sliced mozzarella and shaved parmesan
- Pizza sauce– Your favorite kind
- Pepperoni– Not a fan of pepperoni? Use whatever topping your family likes!
How to Make
To make these mini deep dish pizzas, start by spraying a 12 count muffin tin with non stick cooking spray.
Set the prepared tin aside.
Then, open the tube of pizza dough, unroll it, and spread it out on a clean cutting board.
Roll the dough out slightly with a rolling pin just to make it a bit thinner.
Then, use a large biscuit cutter with a circle slightly larger than the wells in the muffin tin to cut out 12 circles of dough.
Add a circle of dough to each of the wells in the prepared muffin tin, pressing the dough down in the center and up the walls of the well.
Using a smaller biscuit cutter, cut 2 circles out of each slice of cheese.
Add a circle of cheese to the bottom of each dough cup.
Top with slices of pepperoni, followed by a spoonful of sauce, and finish with a few pieces of shaved Parmesan.
Bake the mini deep dish pizzas at 375° for 15 minutes.
After 15 minutes, carefully remove the muffin tin from the oven.
Let the pizzas rest for 2 minutes.
After the pizzas have had a chance to sit, run a butterknife around the edges of each well to release the pizzas.
Serve warm and enjoy!
Storing Leftovers
You can keep leftovers in an airtight container in the fridge for 4-5 days.
Reheat them in a hot oven until warmed through and the cheese has melted again.
Can I freeze mini deep dish pizzas?
Yes!
After making them as instructed, let them cool and remove them from the muffin tin.
Place them on a baking tray and freeze for 30 minutes to an hour.
Once they are frozen, you can transfer them to a ziplocking freezer bag and freeze them up to 3 months.
When you are ready to enjoy them pop them in a hot oven and cook until thawed, warmed through, and the cheese melts.
Tips and Tricks
- Don’t have a biscuit cutter? You can use a drinking glass or a mason jar lid.
- Customize the toppings to suit your tastes! Other yummy options include diced green peppers, mushrooms, slices of meatball, etc.
- Make sure to let them rest when they come out of the oven so the cheese has a chance to set up.

- Add a circle of dough to each of the wells in the prepared muffin tin. Press them down flat in the center, and up the sides of the wells.
- Using a smaller biscuit cutter, cut 2 circles out of each slice of cheese. Add a circle of cheese to the bottom of each dough cup.8-10 slices mozzarella cheese

- Bake the mini pizzas at 375° for 15 minutes, then carefully remove the tin from the oven, and let it rest for 2 minutes.
