I am always looking for ways to shake up the weeknight dinner routine without making things more complicated.
These Mississippi sloppy joes do exactly that!
They put the beloved flavors in Mississippi pot roast into a sandwich that’s ready in less than half an hour.
And the quick cook time doesn’t skip on all the classic Mississippi flavors.
You still have seasoned ground beef, pepperoncini peppers, and tons of sauciness.
It’s rich, tangy, and incredibly satisfying.
They’re quick enough for busy evenings but different enough to feel like something special compared to ordinary sloppy joes.

Ingredients
To make these you’ll need:
- Ground beef– Go for leaner ground beef so it doesn’t get too greasy or cook down too much.
- Onion– A medium yellow onion, peeled and diced.
- Garlic– Minced or pressed garlic cloves.
- Pepperoncini peppers– Both the sliced peppers and and some pepperoncini juice.
- Butter
- Seasonings– Salt, pepper, dried dill, and smoked paprika
- Condiments– Worcestershire sauce, ketchup, mayonnaise, and apple cider vinegar.
- Beef broth– For a bit of the au jus feeling for the sauce.
- Cornstarch– To thicken things up.
- For the sandwiches– Sliced provolone cheese and toasted brioche buns.

How to Make
These Mississippi sloppy joes are super easy to make!
Just cook and crumble the ground beef in a large skillet set over medium high heat until the beef has completely browned.
Once it’s cooked, strain the grease off the meat and set the beef aside.
Then saute the onion in the skillet you used to cook the beef in.
Once the onion has softened, add the beef back to the skillet and stir the garlic.
Let the garlic cook for 1 minute or until it just gets nice and fragrant.
Turn the heat down to medium.

Season the beef mixture with salt and pepper, to taste.
Then stir in all of the remaining ingredients except for the broth and cornstarch until everything is evenly combined and the butter has melted.
Whisk the broth and cornstarch together in a separate small bowl until they are smoothly combined.
Stir it into the skillet and let it cook, stirring often, just until the mixture thickens.
Spoon onto buns and top the beef with a slice of cheese and extra peppers.
Serve immediately and enjoy!

Storing Leftovers
Store leftover sloppy joe meat in an airtight container in the fridge for up 4 days.
Reheat the beef in the microwave until warmed through.

Tips and Tricks
- Want to add more veggies? Dice up a green bell pepper and add it to the skillet with the onion.
- Finely chop the pepperoncini peppers so you get some of that tangy brine in each bite.
- If the sauce is still looking too thick, just let it simmer for a little longer and remember it will thicken as it cools.
- And if the sauce is too thick when you go to reheat the leftovers, thin it out with a little beef broth before reheating.
- While you don’t have to toast the brioche, toasting it will help prevent soggy sandwiches.

- 1/4 tsp dried dill
- pinch smoked paprika
- 1/2 tbsp pepperoncini pepper juice
- 1 cup beef broth
- 2 tsp cornstarch
- 6 slices provolone cheese
- 6 brioche buns toasted (optional, but recommended to prevent sogginess)
Instructions
- Add the ground beef to a large skillet set over medium high heat and cook, crumbling, until completely browned. Strain of grease and set aside.1 lb ground beef
- Add the onion to the skillet and saute until softened. Return the beef to the skillet, add the garlic, stir to combine, and cook for 1 minute.1 medium yellow onion, 3 cloves garlic
- Reduce the heat to medium and season with salt & pepper, to taste.salt & pepper
- Add the remaining ingredients, except for the broth and cornstarch, and stir everything together until evenly combined and the butter's melted.3 tbsp sliced pepperoncini peppers, 1 tsp worcestershire sauce, 2 tsp ketchup, 2 tbsp butter, 1 1/2 tbsp mayonnaise, 1 tsp apple cider vinegar, 1/4 tsp dried dill, pinch smoked paprika, 1/2 tbsp pepperoncini pepper juice
- Whisk the broth and cornstarch together in am small bowl until evenly combined and smooth. Pour into the skillet and stir to combine. Cook, stirring often, just until the mixture's thickened- about 5 minutes.1 cup beef broth, 2 tsp cornstarch
