Storing Leftovers
This cake is meant to serve one and be eaten in one sitting.
However if you do have leftovers, cover the mug tightly and refrigerate for up to 3 days or so.
Reheat it in the microwave if desired before serving again.

Tips and Tricks
- Use a large microwave-safe mug (at least 10–12 oz) to prevent the batter from overflowing as it cooks.
- Microwave it increments with the first increment being 1 minute. Check the cake after a minute to see if a toothpick inserted in the middle of the cake comes out clean. If not, microwave it for an additional 30 seconds and then check again. If it still isn’t done, shorten the increments to 15 seconds.
- Spray the mug well with nonstick spray so it doesn’t stick.
