An omelet in a mug is the perfect meal for one! It’s easily customizable to suit your taste and perfect for making when all you have to cook with is a microwave. And it’s perfect for busy mornings when you just need to get breakfast in your belly before heading out the door!
As my older sons start moving out, I’ve been trying to teach them easy recipes for one they can make with minimal cooking items.
And microwaveable recipes are the perfect thing!
While everyone knows about mug cake and mug cookies, an omelet in a mug gives you a protein packed main dish for breakfast or dinner.
It’s easy and the result is delicious.
To be honest, I will make these for myself when I’m not cooking for a crowd.
Ingredients
To make these, you’ll need:
- Eggs
- Mix ins– I’m using diced ham, shredded cheddar cheese, and green onions but use what you like and have on hand.
- Salt and pepper– To taste
How to Make
An omelet in a mug is so easy!
Just spray the inside of a large microwave safe coffee mug with nonstick spray.
Crack the eggs into the mug, discard the shells, and whisk them together with a fork until they are combined.
Stir in the cheese, ham, and onions.
Add salt and pepper the mixture, to taste.
Microwave the omelet for 1.5 to 2 minutes.
Make sure to keep an eye on it in case it overflows!
Remove the fluffy eggs from the microwave and let the mug cool.
Eat warm and enjoy!
Variations
While this is a recipe for a ham and cheese mug omelet, you do not have to use ham and cheese!
Instead of ham you could use:
- sausage crumbles
- cooked crumbled bacon
- leftover flaked salmon
- or just omit the meat all together!
If you want more veggies, this is delicious with:
- baby spinach
- diced mushrooms
- diced peppers and onions
And of course use whatever cheese you want or skip it if you’re not into cheese!
Tips and Tricks
- Watch the egg mixture carefully when you microwave it. The mixture WILL rise. We use extra large mugs that allow plenty of room for expansion.
- All microwaves can differ in cook times, and you may need to adjust the cook time to adjust to yours. Start with less, then cook more- if needed.
- Be careful when removing the mug from the microwave. It will be HOT.
