But that’s exactly what these pancake breakfast tacos are!

They take everything you love about a classic breakfast and wrap it up into a handheld meal that’s easy to eat whether everyone is sitting at the table or rushing out the door.

The pancakes act like soft taco shells, holding fluffy eggs, melty cheese, and savory fillings for that perfect mix of sweet and savory in every bite.

Ingredients

To make these you’ll need:

  • Pancakes– Frozen buttermilk pancakes
  • Scrambled eggs– Check out my foolproof fluffy scrambled egg recipe
  • Sausage links– Cooked according to the package directions. 
  • Cheese– Shredded cheddar. This is optional for serving
  • Syrup– For serving

How to Make

Pancake breakfast tacos are so easy to make!

Just make the pancakes and sausage links according to the instructions on their packages.

Set them aside and scramble up the eggs, whisking them together in a bowl to break the yolks and cooking them over medium low heat pulling a spatula in from the sides to the center until they are soft set.

Then assemble the tacos by adding the eggs, followed by sausage and cheese.

Serve immediately with a drizzle of syrup and enjoy!

Storing Leftovers

These are best enjoyed right after you make them and I don’t recommend storing the assembled pancake breakfast tacos.

However you can store leftover scrambled eggs and sausage in separate air tight containers in the fridge for up to 3 days each.

Tips and Tricks

  • You can customize these to your like and swap toaster waffles for pancakes or bacon for sausage.
  • Plan on 8 to 10 eggs for 2 cups of scrambled eggs.
  • Not into scrambled eggs? You could use fried if you prefer.

Ingredients

  • 12 frozen buttermilk pancakes
  • 2 cups fluffy scrambled eggs
  • 12 cooked breakfast sausage links
  • shredded cheddar cheese optional
  • pancake syrup for serving

Instructions

  • Prepare both the pancakes and sausage link per the instructions on their packaging. Set aside.

  • Assemble the tacos by adding the eggs, followed by the sausage, then topping with cheese (if using) to the warm pancakes.
