- Vanilla– Real vanilla extract tastes better than imitation.
- Eggs
- Flour– All purpose
- Baking soda– For leavening
- Salt
- Chocolate chips– Milk chocolate will give you the most s’more like flavor but you can use milk or semi sweet.
- Mini marshmallows
- Cinnamon Toast Crunch– Crumbled for the graham cracker layer. You could also substitute crumbled graham crackers or a cereal like Cinnamon Chex.
- Hershey’s Chocolate Bar– A s’mores must have!
- Fudge icing– Your favorite store bought kind.
How to Make
Making a s’mores cookie cake is very similar to making any other cake.
Just start by creaming together the shortening or butter, sugar, and brown sugar until well combined.
Then beat in your vanilla, and eggs until well combined.
Set the wet ingredients aside.
Sift together your flour, baking soda, and salt in a separate bowl.
Gradually add the dry ingredient mixture to your wet ingredients, mixing in until completely combined.
Fold in your chocolate chips, mini marshmallows, and Cinnamon Toast Crunch.
Then press the dough into the bottom of a well greased cookie cake pan, mounding it up in the center so the center doesn’t collapse while you bake it.
Bake the cookie cake at 375 degrees 11-15 minutes, or until it is slightly golden.
Pull it out of the oven and immediately top it with pieces of your chocolate bar, some extra marshmallows, and Cinnamon Toast Crunch.
Then pop the cookie cake bake into the oven on broil to brown the marshmallows.
Pull it out as soon as the marshmallows brown.
Let cool completely and decorate as you wish with icing.
Slice and enjoy!
