Brownie cookies turn a box of brownie mix into delicious chocolate chocolate chip cookies. This quick and easy dessert is yummy for bake sales or anytime you want to satisfy a sweet tooth.
I don’t care what anyone says, but boxed brownie mix is amazing.
Not only does it give you brownies that are hard to beat but you can turn it into cookies with a few easy adjustments.
Are brownie cookies different from brookies?
Yes.
Brookies are a bar that swirls together or layers brownies and chocolate chip cookies.
Brownie cookies are more like a chewy chocolate chocolate chip cookie.
Ingredients
To make these you’ll need:
- Brownie mix– I highly recommend using the 18 ounce Ghirardelli triple chocolate brownie mix. While you technically could use another 18 ounce box, Ghirardelli’s brownie mix is the best.
- Flour– All purpose
- Eggs
- Oil– Canola or another mild tasting light oil.
- Water
- Chocolate chips– I recommend mini chocolate chips but you can use regular ones if you’d like.
How to Make
These cookies are so easy to make.
There’s no creaming together butter and sugar; it’s just dump and mix!
To make them, add all of the ingredients to a large mixing bowl and use a hand mixer to whip them all together, just until evenly combined.
Once you’ve made the dough, line a large baking sheet with parchment paper.
Using a small cookie scoop, drop the dough onto the cookie sheet in scoops roughly spaced 2 inches apart from one another until all the dough has been used.
Bake the cookies at 350° for 8-10 minutes.
When the cookies are done, remove the pan from the oven and set aside to cool for 5-10 minutes.
Then, use a spatula transfer the cookies to wire racks to finish cooling completely.
Serve the cookies with a cold glass of milk and enjoy!
How do I know when my brownie cookies are done?
You’ll know they’re done when the edges are set and there’s a thin film on top.
At this point, the cookies won’t be glossy looking, but you’ll still see bits of the darker batter through cracks in the film.
Storing
Store these in an airtight container on the counter for up to a week or so.
Tips and Tricks
- These cookies cook fast, and will go from perfectly chewy to dry quickly. Watch them carefully starting around the 8 minute mark.
- Cookies will be slightly underdone when you remove them from the oven. They will finish setting up during the cooling stage so don’t skip those steps.
- Using a larger cookie scoop will add extra cook time.
- Use different brownie mixes at your own risk. I haven’t tested them. I do know this brand contains baking powder which makes it ideal for brownie cookies that actually rise during baking. Brownie cookies won’t rise as much as traditional cookies though.
