Cheesy chicken broccoli and rice foil packets are a delicious meal that’s perfect for meal prepping! Not only does it make meal prep easy but clean up will be a breeze making these a recipe you’ll want to keep in your back pocket for any busy night.
When I know I’m in for a busy week, I like to plan accordingly if I can.
That means my Instant Pot and slow cooker both get a workout.
But if I know I’m in for a particularly busy week, I also like meals I can make ahead and don’t have to clean up after.
So pretty much anything in a foil packet.
These cheesy chicken, broccoli and rice foil packet is a complete meal that I can make ahead and freeze or refrigerate so all I need to do is pop it in the oven.
No muss, no fuss.
Ingredients
To make these foil chicken packets, you’ll need:
- Chicken breasts– Trimmed of fat and diced.
- Spices– Seasoned salt, black pepper, smoked paprika, garlic powder, and onion powder
- White rice– Cooked and cooled. Use basmati or jasmine rice if you can.
- Broccoli– Fresh broccoli florets
- Cheese– Shredded cheddar
- Bacon– Chopped, crispy, cooked bacon.
How to Make
Making these chicken, broccoli, and rice foil packets is easy!
To do it, toss the chicken with the seasonings in a mixing bowl until the chicken’s coated.
Set the seasoned chicken aside.
Then, lay six 12×12″ pieces of foil out on a clean counter top.
Equally divide the rice in between the foil packets, placing a scoop in the center of each.
Top the rice with the chicken and broccoli.
Spread the mixture out just a bit so it’s somewhat flatter, but still centered.
Top each with cheese and then bacon.
Seal each foil packet by lifting up the sides of the foil until they all meet in the center and roll (or fold) them to close.
Leave a tiny hold open in the center for steam to escape.
Repeat this until all the foil packets are closed.
Then transfer them to a large rimmed baking sheet.
Bake at 375° for 25 minutes.
Remove the baking sheet from the oven, and let it rest undisturbed for a full 10 minutes.
Open the packets, avoiding the hot steam that escapes.
Serve and enjoy!
Storing Leftovers
Store leftovers by transferring them to an airtight container and refrigerating for up to 3 days.
Make Ahead Instructions
You can make the chicken, broccoli, and rice foil packets ahead of time and either freeze them or refrigerate them for meal prep.
To make them ahead, assemble the packets as directed above but do not bake them.
Instead seal the closed packets in a freezer safe ziplocking bag and freeze for up to 3 months or seal them in a regular ziplocking bag and refrigerate them for up to 2 days.
When you are ready to make these packets, thaw them if you froze them and then bake as instructed when ready to enjoy.
Make sure to remove the ziplocking bags prior to baking.
Tips and Tricks
- You can sub cauliflower rice for regular rice to cut carbs
- This is a great way to use up leftover cooked rice!
- Leftovers can be reheated for a few minutes in either the oven or the microwave
- You can be air fry these too! Just cook 1-2 packets at a time at 370 degrees for 8-10 minutes.
