Ingredients

  • 1 15 oz can black beans drained & rinsed
  • 1 15 oz can yellow sweet corn drained
  • 1 large red bell pepper seeded & diced
  • 1 large green bell pepper seeded & diced
  • 1 small red onion peeled & diced
  • 2 tbsp chopped fresh cilantro leaves
  • 1/2 cup sour cream
  • 1/4 cup mayonnaise
  • 2 tbsp red wine vinegar
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 1 1/2 tsp garlic powder
  • salt & pepper to taste

Instructions

  • Add the beans, corn, peppers, onion, and cilantro to a mixing bowl. Gently stir together until evenly combined.
    1 15 oz can black beans, 1 15 oz can yellow sweet corn, 1 large red bell pepper, 1 large green bell pepper, 1 small red onion, 2 tbsp chopped fresh cilantro leaves
  • To a separate mixing bowl add the sour cream, mayonnaise, vinegar, and seasonings. Whisk them together until evenly combined.
    1/2 cup sour cream, 1/4 cup mayonnaise, 2 tbsp red wine vinegar, 1 tsp ground cumin, 1 tsp chili powder, 1 1/2 tsp garlic powder, salt & pepper
  • Pour the dressing over the bean mixture, then gently toss everything together until evenly coated.
  • Serve with tortilla chips, and enjoy!
