Instant Pot Cilantro Lime Rice (Chipotle Copycat)

Instant Pot cilantro lime rice is an easy copycat of Chipotle’s delicious rice. Thanks to your pressure cooker you can enjoy the flavors of the fast casual chain’s rice right at home!

Mmmm, do I love me some Chipotle.

It doesn’t get much better than a burrito with all the fixings.

And I almost always order Chipotle’s cilantro lime rice as a base.

It’s fluffy white rice laced with tangy lime juice and plenty of bright cilantro.

Fortunately I have found a way to make that dish right at home and it tastes just like the classic Chipotle cilantro lime rice.

It’s easy thanks to my Instant Pot and needs only a few fast minutes of prep.

Ingredients

To make this you’ll need:

  • Vegetable broth– You can substitute chicken broth or in a real pinch even water.
  • Water
  • Oil– Canola oil or another light mild oil.
  • Lime– Both juice and zest
  • Rice– Use a long grain rice like basmati or jasmine.
  • Cilantro– Fresh chopped cilantro leaves not dried. Make sure you wash the cilantro well before using it.
  • Salt– To taste

How to Make

Making Instant Pot cilantro lime rice is so easy!

Just make sure the liner is in your Instant Pot before starting and

Then add the broth, water, oil, 2 tablespoons of the lime juice, and rice to the bowl.

Secure the lid on the Pot and set the vent valve to the ‘sealed’ position.

Press the ‘rice’ button on the Pot to begin the cooking process.

After the Pot beeps, let the rice rest for 5 minutes while the steam naturally releases.

Then carefully open the valve to quick release the remaining hot steam.

Transfer the hot rice to a serving bowl and fluff it with a fork.

Stir in the remaining ingredients.

Serve warm and enjoy!

Storing Leftovers

Store leftovers in an airtight container for up to 3 days in the fridge. 

Reheat in the microwave until warmed through.

  • Don’t have an Instant Pot? You can also use a rice cooker.
  • I recommend opening the vent valve using a long handled wooden spoon to avoid a potential burn from the escaping hot pressurized steam.
  • Make sure you wash the cilantro well before using it. Cilantro tends to have a lot of gritty dirt on it that will ruin the rice if you don’t wash it first.

Ingredients

  • 2 cups vegetable broth can substitute chicken broth
  • 3/4 cups water
  • 2 tbsp canola oil
  • 3 tbsp lime juice divided
  • 2 cups long grain rice basmati or jasmine rice recommended
  • zest from 1 lime
  • 1/2 cup freshly chopped cilantro leaves
  • salt to taste

Instructions

  • Make sure the liner is in your Instant Pot then add the broth, water, oil, 2 tbsp of the lime juice, and rice to the bowl.
    2 cups vegetable broth, 3/4 cups water, 2 tbsp canola oil, 3 tbsp lime juice, 2 cups long grain rice
  • Add the lid, turning to close, and set the vent valve to the 'sealed' position.
  • Press the 'rice' button to begin the cooking process.
  • After the rice is done, let it rest for 5 minutes- the carefully open the valve to quick release the remaining hot steam.
  • Carefully transfer the hot rice to a serving bowl, and fluff with a fork. Add the remaining ingredients to the rice, gently stirring to evenly combine.
    zest from 1 lime, 1/2 cup freshly chopped cilantro leaves, salt
  • Serve warm & enjoy!
