Sheet Pan Grilled Cheese Sandwiches

Sheet pan grilled cheese sandwiches are an easy way to make a whole batch of crispy, golden sandwiches with perfectly melted cheese all at once without standing over a skillet. They’re perfect for feeding a family or crowd quickly and are super handy on busy weeknights or lunch times.

Listen, I love me a good grilled cheese.

It’s my break glass in case of emergency I don’t feel like cooking meal.

But sometimes I don’t even have the desire to make grilled cheese for all 6 of us.

I can’t make them all at once on the stove.

Plus those nights when I am just done, standing over the stove making sandwich after sandwich gets old pretty quickly.

That’s when these sheet pan grilled cheese sandwiches come in.

It makes the whole process so much easier, letting you make multiple crispy, buttery grilled cheese sandwiches at once.

Once you try making grilled cheese this way, you may never want to go back to standing over a skillet flipping individual sandwiches again!

Ingredients

To make these you’ll need:

  • Bread– Good quality sliced white bread. I recommend sourdough, but use what you like.
  • Cheese– Sliced cheddar. Again, substitute whatever your favorite sliced cheese is.
  • Butter– Softened
  • Mayonnaise– Real, full fat mayonnaise and not Miracle Whip or mayonnaise style dressing.

How to Make

These sheet pan grilled cheese sandwiches are effortless!

Just spread a 1/2 teaspoon each of butter on the outside of 2 slices of bread and 1/2 teaspoon each of mayonnaise on the inside of each.

Lay one slice, butter side down, on a well greased baking sheet.

Top the mayonnaise side of the bread with two slices of cheese.

Then close the sandwich by topping the cheese layer with a slice of bread, putting the mayonnaise side down face down.

Repeat until you’ve assembled all the sandwiches and laid them on the baking sheet.

Bake them at 400° for 5 minutes.

Carefully flip the sandwiches over and then continue baking for another 3-5 minutes or just until the sandwiches are golden brown and the cheese is melted.

Serve warm and enjoy!

Storing Leftovers

Just like traditional grilled cheese sandwiches, these are best enjoyed right after you make them.

They will get soggy in the fridge.

Tips and Tricks

  • You can use as much butter as you need to cover the bread in a thin layer.
  • Let the butter soften on the counter before you spread it on the bread.
  • For best results, I really recommend using sliced bakery bread instead of regular sliced sandwich bread but if that’s what you’ve got on hand, it will work.

Ingredients

  • 8 slices good quality white bread sourdough recommended
  • 8 slices cheddar cheese
  • 3 tbsp softened butter
  • 2 tbsp mayonnaise

Instructions

  • Spread 1/2 teaspoon each of butter on the outside of 2 slices of bread and 1/2 teaspoon each of mayonnaiseon the inside of each.

  • Lay one slice, butter side down, on a greased baking sheet. Top with two slices of cheese, followed by a slice of bread- mayonnaise side down.

  • Repeat until all the sandwiches are assembled and arranged on the baking sheet.
  • Bake at 400° for 5 minutes. Carefully flip the sandwiches over, then continue baking for another 3-5 minutes- just until golden brown and the cheese is melted.
